Austin Cueto discovered his love of food by admiring European chefs of Michelin-starred restaurants, inspiring him to study culinary arts at Johnson & Wales in Denver. Austin began his training in a rigorous classical brigade kitchen environment in Santa Barbara, CA. His passion drove him back to his hometown of Denver where he furthered his career as the executive chef and partner of Kevin Taylor Restaurant Group, including leadership roles at Restaurant Kevin Taylor, Kevin Taylor’s at the Opera House and Denver Art Museum. Austin designed and implemented rotating seasonal menus inspired by the exhibits at the Denver Art Museum, like Van Gogh, Cartier, and Yves St Laurent. Austin is dedicated to classical techniques, combined with innovative, modern concepts. This interest led him to Quality Italian, a modern interpretation of an Italian-American steakhouse, where he leads the chef team. Austin was recognized with a Chaine de Rotisseurs for culinary excellence in 2017.
